Executive Chef Paul Trowbridge has been cooking professionally since 1992. He started his culinary career at Dock Street Brewing where he first experimented with complementing beer with food. Trowbridge later worked with acclaimed Chef Guillermo Pernot. He attributes the experience with Pernot as the best influence of his career. His accolades and past influences led him to Devil’s Den in South Philadelphia, returning to creative beer-driven cooking. Trowbridge latest venture is heading up the kitchen at Barren Hill Tavern & Brewery. Trowbridge’s menu at Barren Hill combines creative takes on comfort-food classics, putting forth delicious food that pares perfectly with the house-crafted brews and extensive and well-curated beer list.

Founder & Restaurateur Erin Wallace has a flare for creativity. The brainchild of South Philly’s Devil’s Den and Manayunk’s Old Eagle Tavern, Wallace originally studied art in her hometown of Baltimore, Maryland. After moving to Philadelphia and working in numerous bars and restaurants, Wallace became a fixture on the city’s rich beer scene. A trip oversees to Germany and Austria enriched her beer palate even more. Eleven years ago she opened her first craft beer focused bar, the Old Eagle Tavern and six years ago she brought the craft beer scene to South Philadelphia with Devil’s Den. Wallace’s latest accomplishment is opening Barren Hill Tavern & Brewery in Lafeyette Hill. Erin Wallace is also a long-time board member for Philly Beer Week and is known for hosting original, creative and informative beer-centric events at her establishments that are both educational and fun.
Head Brewer Dave Wood , formerly from Free Will Brewing Company, plans to expand production and offer more styles of beers in the year ahead. Wood’s plan includes 16 varieties of house craft beers on draft, along with 15 guest taps. By offering a large, well-crafted and diversified draft list, Wood’s goal is to make Barren Hill the region’s best brewpub with a reputation for outstanding craft beer and a must-visit for any beer fan
